Warm Broccoli Salad with Panko Bread topcook.tomathouse.com
Ingredients:
- 1 head of broccoli, florets removed from stem, stem peeled and sliced
- 2 tsp plus 1 tbsp olive oil
- 2 tablespoons whole grain breadcrumbs
- 5 cloves garlic, sliced
- 1/3 cup white wine
- Red pepper flakes
- Coarse salt
- Zest of 1/2 lemon, grated on a fine grater
Preparation:
- Cook the broccoli in salted boiling water for 3 minutes. Drain in a colander and cool under cold running water. Dry on paper towels.
- Heat olive oil in a small frying pan, add panko breadcrumbs, lightly fry for 2-3 minutes. Let cool.
- Sauté the garlic in a deep skillet with the remaining tablespoon of olive oil for about 3 minutes. Pour in the white wine, add the cooked broccoli and red pepper flakes; season with salt. Continue cooking, stirring constantly, until wine until it evaporates, about 5 minutes. Place the ingredients in a salad bowl, sprinkle with grated lemon zest and panko breadcrumbs on top.
