Grilled salmon in olive vinaigrette

Ingredients:

  • 0.5 cups olive oil
  • 1/4 cup red wine vinegar
  • 0.5 cups pitted Nicoise olives
  • 1/4 teaspoon chili de arbol powder or cayenne pepper
  • 2 cloves garlic, chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp. honey
  • 4 salmon fillets weighing 180 g each.

Preparation:

  1. Combine olive oil, vinegar, olives, chili powder, garlic, mustard, and honey in a blender and blend until smooth. Season with salt and pepper to taste.
  2. Place the fish in a small baking dish; pour 1/2 cup of the vinaigrette over it and let it marinate for 15 minutes. Preheat the grill to high heat or place a grill pan over high heat.
  3. Remove the salmon from the marinade, season with salt and pepper. Cook for 3-4 minutes on each side, brushing on the remaining seasoning every 2 minutes.
